Blueberries, cranberries, raspberries and all berries are super good for our health. They are rich in antioxidants, full of nutrients, good for sight, skin and body rejuvenation. We can consume them into a variety of recipes, from juices and smoothies to nice cakes and candies, all raw, preserving all the nutrients intact. Of course we can also consume them freshly picked from the garden.

A simple way to make a delicious treat for the entire family and friends joining us is to prepare a raw cake. All we need is two layers, one is the crust and the other one is the cream filling, then we put them together and we`ve got our awesome cake.
For the crust we need:
1 cup of coconut flakes
1 cup of dates, dried or fresh
cinnamon
1-2 spoons of psyllium husk and some water- the psyllium husk will absorb the water and expand turning it into a more fluffy texture for the crust.
We mix them together to create a thick consistency and then we spread this mixture into a cake form.
Also for the cream filling we need:
2-3 cups of frozen or fresh berries
1 cup cashews
maca powder
1-2 spoons of coconut oil for a more creamy texture or we can use more if we wish
water to mix well
vanilla
1-2 spoons of lemon juice and we can also add some peeled lemon as spice
We blend them all together and poor the cream filling on top of the crust. Then we put it into the freezer for about 2-3 hours and when we`re ready to taste it we just leave it at room temperature for a little while to be able to slice it and enjoy it.
