
Summer times are still a few months away but we can still enjoy a lovely tasting bite of those moments with some raw vegan cherry cake. All we need is a blender in order to make the cashew cream and we are ready to enjoy some summer flavors.
This cherry cake is a simple, easy to make raw delight with only one layer of goodness and of course, the decorations.

The ingredients for this recipe are:
500 g frozen cherries or freshly picked cherries(if you are trying this recipe during the warm season)
200g cashews
50ml coconut oil
50ml agave syrup
vanilla powder
juice of one lemon
1 cup of water.
Put the cashews, lemon juice, vanilla, coconut oil, agave syrup and water in the blender and mix well until you get a lovely and smooth, creamy consistency. Add a little bit more water if needed.
Pour the cashew cream in a cake form, add the frozen cherries and spread them both evenly and then we go on to our next step.

The next step is decorating this amazing looking raw creamy dessert with some grind lemon peel, cinnamon, some more cherries and we can add also some coconut flakes if we wish. Coconut goes wonderfully with the cashew cream so try it and see how you feel about this savory combination of healthy ingredients.
After about 1 to 2 hours in the freezer, the yummy cherry cake is ready to be enjoyed with your friends and family members so spread the joy of eating healthy and delicious and live the wonderful life that you deserve!
