Star Cookies

A simple and delicious raw dessert is a star cookie recipe. Those cookies are absolutely fantastic, tasty and fulfilling, crunchy and a lovely choice both as a healthy snack or a wonderful breakfast idea, going well with a creamy fruit smoothie either in the morning or later during the day. Easy to digest, concentrated source of proteins, a good tasting raw food that goes well for raw vegans, vegans and everybody else so it is definitely a friendly choice for pretty much everyone.

All that we need is a  star shape cookie cutter (or any other form that you wish) and a food processor for mixing the ingredients. The cookies can be enjoyed right when we are done making them or a little bit later after we leave them in the fridge for about one to two hours.

The ingredients that we need for making those lovely looking star cookies are:

1/2 cup mix of cashews and brazil nuts

1 cup dates

1 cup oat flakes

vanilla powder

2-3 Tbs cocoa powder

2-3 Tbs coconut oil

1 Tbs cocoa butter

2-3 Tbs agave syrup or maple syrup.

We put all the ingredients in the food processor and start mixing them. After a while, when all the ingredients start to make a thick texture, we can also add a little bit of water or some veggie milk such as almond, cashew or brazil nut milk, in order to help this process take place and continue mixing until we have a thick texture, not too dry, not too creamy  but just about enough to stick together. Then we start cutting the star cookies from the dough and when we are done we can leave them in the fridge for a while if we wish or we can taste them and enjoy the lovely tastes and textures.
