It`s definitely getting hotter and the spring season is starting to make the temperatures get higher so it is about time to try some raw ice cream. Summer is pretty close, but we still have to wait for a while until we can go to the beach and swim and do any other summer activities, still while we are waiting we can enjoy a little bite of summer beauty.

This raw vegan ice cream can be enjoyed whether frozen or if you just allow it to melt for a while you can still taste this wonderful recipe as a delicious nutty and fruity cream filling. The basics of this recipes are of course cashews, which are the absolute wonderful creamy, fulfilling nuts that go well with pretty much anything, some healthy sweetener of choice and of course your favorite flavors. Whether it is vanilla, chocolate, fruits, exotic spices, you name it, it will be an absolutely delicious treat to enjoy with your lovely friends and family members.

Here we have some cherry ice cream made by simply putting some cherries on the bottom of your ice cream box and then pouring some cashew cream made of the following ingredients: cashews, water, vanilla, lemon juice, maca powder, coconut oil, on top of it. It just need to stay in the freezer for a few hours and then when we take it out, we leave on the table for about 15 minutes to get a creamy consistency and then we can gently enjoy it and get into the summer feeling that is about to come.
