More and more fresh and local veggies are coming out on the market since most of this spring season has already passed so it is time for more fresh goodness and a delightful rainbow of colors to rise up and jump on our food table. Today is all about making veggies our beloved friends and getting high quality nutrition in the most beautiful way.

This dish is simple, delicious and easy to make and of course it tastes absolutely amazing. The way our food looks like is a very important aspect and that is why it is so essential to make healthy choices in a beautiful looking way, in a way that makes us desire to take one more bite of that fresh goodness again and again. Repetition brings reinforcement so by constantly making choices that are good for our health, our bodies and respect our own preferences we actually make progress in the process of designing a better lifestyle and a more happy and fulfilling life.
The ingredients for this recipe are:
1-2 zucchinis
1 tomato
basil
oregano
olives
1-2 Tbs cold pressed olive oil.
We slice the tomatoes and the zucchinis and make our first layer.
For the cream filling of this veggie dish we need:
1/2 cup almonds
1/2 cup water
2-3 dried tomatoes
lemon juice
1-2 tbs nutritional yeast flakes.
We blend those ingredients until we get a creamy consistency which we then pour on top of our first veggie layer, then we add another veggie layer on top of the cream, and so on until we have about 5 layers: 2 almond cream layers and 3 veggie layers. On top of the last veggie layer we sprinkle some olives, basil and oregano and pour the olive oil. Next we will leave it in the fridge for about 1-2 hours to allow the veggies to soften and then we can enjoy it with our lovely friends and family members. Yum!
