Buckwheat is a wonderful food choice in terms of it`s delicious taste and the nutritious income that it brings, being very easy to incorporate in a healthy lifestyle. It can be found in many different forms on the market such as whole grains, sprouts and raw or cooked groats having a color that varies from light yellow-green when it is raw to a brown color in the cooked version. Buckwheat is a very good food as it has lots of good fiber, contains high-quality proteins and it is a lovely choice for a gluten free diet along with the other gluten free pseudo cereals or grains such as quinoa, millet, rice, brown rice, wild rice, etc.

As a simple way to incorporate buckwheat I just love to use it in my salads, next to some leafy greens, walnuts usually or any other nuts and of course some dressing of choice but I also love to use it to make gluten free breads or cookies.
This beautiful salad that we are taking about today is made of the following ingredients:
1/2 cup soaked buckwheat
mix of fresh greens
1/2 cup diced cucumber
mix of olives
nutritional yeast flakes
2-3 dried tomatoes
oregano, basil
2-3 tbs cold pressed flax seed oil.
We mix the fresh greens mix with the buckwheat, nutritional yeast flakes and cucumber, then we add the flax seed oil and olives, finally we decorate with some more olives and nutritional yeast flakes and add the dried tomatoes, basil and oregano on top of our beautiful looking salad.


Now it is time to take a bite of this delicious salad and celebrate the lovely feeling of being healthy in our amazing looking bodies and making conscious choices a daily practice that brings us to a better lifestyle that we deserve. We are the ones designing our life stories so let`s just start by simply making small steps in the direction of our goals and trust that we do have the power to achieve those goals.
