Wild Berries Cake

Wild berries are a wonderful source of antioxidants, vitamins and minerals and a colorful addition to any raw vegan goodies such as smoothies, raw vegan bars, cakes and candies. Their precious nutrients get absorbed pretty quickly by our amazing bodies and they are also a lovely thing to add to our summer drinks, like lemonades and fresh pressed juices and many other delicious choices.

Summer is a time for color and joy, fresh and delicious recipes made with freshly picked ingredients and flavored with some amazing super foods such as wild berries. Living a raw vegan lifestyle is simple and easy, we just have to find what tastes we enjoy most and make amazing looking goodies in order to have a healthy body and a peaceful mind.

One way to enjoy the summer flavors is to make a wild berries cake, simply by mixing the following ingredients:

Crust

100 g carob powder

100 g nuts

100 g raisins

1-2 tbs coconut oil

vanilla

cinnamon.

Cream filling

200 g wild berries mix

100 g cashews

3-4 tbs agave nectar

3-4 tbs coconut oil

1-2 tbs cacao butter

vanilla

maca powder

1 cup of water.

We use a food processor to mix the ingredients for the crust until we get a thick, sticky consistency. We spread the crust on the bottom of a cake form and we go on to our next layer.

For the cream filling we use a blender and mix the ingredients until we get a  creamy and smooth consistency which we now spread on top of our crust. Then we can add some more wild berries on top of our cake and put the cake in the freezer for a few hours.

When it is done we can take it out of the freezer and taste a delicious and colorful slice of this beautiful looking cake.
