Pizza is probably many people`s favorite food​ so making it healthy and delicious is definitely possible. A vegan and colorful pizza gives you the wonderful experience of sharing a good food with your loved ones. Pizza is a well known food that is eaten in many countries across the globe so let`s see how we can enjoy a healthy and delicious pizza made with lots of veggies and tasty goodies and of course lots of love and joy.

This pizza is gluten free which is a great thing because we are also taking care of the allergens so that there would be no inflammatory reaction in the body. Of course for people who do not have gluten issues it is fine to use also those cereals containing gluten in the process of making the pizza crust. It is sweet, delicious, crunchy, spicy and amazing.

For the pizza crust we need the following ingredients:

1 medium zucchini

1 cup buckwheat

1 tsp mix of oregano and basil

1/2 cup flax seeds

1 tsp turmeric

2-3 Tbs cold pressed sunflower seeds oil

1/4 cup psyllium husk

1 and 1/2 cup of water or more if needed.

We use a food processor to mix the zucchini, buckwheat and 1 cup of water, turmeric, oregano and basil. Then we put this mixture into a bowl and add the psyllium husk, 1/2 cup water and flax seeds and gently stir this mixture until it starts to thicken and get a fluffy texture. If it is needed you can add a little bit more water. When the crust is ready, we spread it on the bottom of a pizza pan.

Next we make the creamy tomato sauce for our lovely and delicious pizza. For this sauce we need:

1/2 cup cashews

1 tomato

3-4 tsp lemon juice

1 garlic clove

1/2 cup water.

We use a blender to mix those ingredients until we have a creamy and smooth beautiful sauce. We spread half of it on top of the pizza crust and the other half we keep for when we are serving the pizza. Now we add the veggies and you can use any veggies of choice of course. I am using for this recipe tomatoes, beets, bell peppers, arugula, radicchio, endive and some hemp seeds on top.

All we have to do now is to dehydrate it in order to get a nice texture. For this you can use a dehydrator or an oven at low temperatures and leave it there until it gets a little bit of a crunchy but not too dry texture. When it is done you just slice it and enjoy a delicious bite of this healthy and amazing looking delight with your lovely friends and family members. Eating healthy is easy, delicious and fun.
