This raw vegan strawberry cream cake is really easy to make and absolutely delicious. I think that this is a wonderful choice for a healthy and fulfilling dessert or even a healthy snack if you wish to have one. I personally do not rely so much on snacks cause I just like to have a main meal and focus on taking time to enjoy this delicious meal and also on making wonderful healthy choices but many people have snacks so feel free to find what you enjoy most.

For making this lovely looking raw vegan cake we need the following ingredients:

Crust

100 g dried cranberries

100 g dates

cinnamon

100 g coconut flakes

100 g raw peanuts or cashews

1-2 Tbs coconut oil.

We use a food processor to mix the ingredients until we have a sticky and thick consistency and then we spread this mixture on the bottom of a cake form.

Next step is making the strawberry cream filling using the following ingredients:

400 g fresh or frozen strawberries

juice of 1 lemon

3-4 Tbs coconut oil

vanilla

1 cup of water

100 g cashews.

We use a blender to mix the ingredients until we have a smooth and creamy consistency and then we pour this lovely and delicious pink strawberry cream on top of our crust.

For the strawberry glaze we mix 100 g of strawberries with some coconut oil and some coconut sugar and pour it on top of the strawberry cream. Yum!

Finally we sprinkle our amazing looking cake with some coconut flakes and cinnamon powder and put it into the freezer for a few hours.

When it is ready we can take it out and slice it and enjoy a delicious slice of this beautiful cake with our lovely friends and family members. Enjoy!
