
This recipe is a delicious combination of greens, fresh veggies and raw vegan nut pate so I call it lasagna because it just simply looks like the traditional lasagna. I just mixed those veggie layers and as I found out about the traditional lasagna recipe I have decided that this good looking delight just looks like this so that is the story for my recipe. When I am making raw vegan food recipes I am not trying to make raw vegan versions of some baked recipes but if the final product looks like something that people already know about then I would use that name with the specification that this is a raw vegan product. It is that simple.
There are of course some basics that we all enjoy in our lives such as: cookies, candies, pies, pizza, lasagna, salads, spreads and so on so it is natural to just use the same names but also tell people that those are vegan and raw but sometimes it may be better to just surprise them. The interesting thing that I have seen among people who are not necessarily interested in a healthy lifestyle is that for them it is better not to know that those products are vegan because then they are interested in trying those recipes and they actually find out that those recipes taste really good even for them. The raw and vegan lifestyle is about fulfillment and finding what best suits our own preferences, so in order to do that we just have to try and see what works best for ourselves and be happy that we are also taking great care of our health by eating this way, the vegan way.
For this lasagna recipe we use the following ingredients:
2 zucchinis
arugula
2-3 tbs hemp seeds
10 cherry tomatoes
a mix of oregano and basil
cold pressed sunflower seed oil
2-3 tbs nutritional yeast flakes
100 g pine nuts
juice of 1 lemon
1/2 cup water
1 red bell pepper.
We cut the zucchinis into thin slices and then we make the veggie spread. For the veggie spread we blend the pine nuts, juice of 1 lemon, nutritional yeast flakes, water, sun flower seed oil, bell pepper and 3-4 cherry tomatoes and then we alternate 1 layer of zucchini slices with one layer of veggie spread until we have about 2-3 layers each. Next step is to sprinkle the lasagna with some arugula leaves, hemp seeds and a mix of oregano and basil. We can also decorate with sliced cherry tomatoes and olives.

This recipe is really beautiful and it tastes absolutely amazing. The veggie spread is creamy and delicious. The arugula brings a little bitterness to the recipes and the cherry tomatoes are absolutely adorable.
