This recipe is absolutely delicious so you have definitely have to try it! It is so simple and easy to make that you can even do these goodies without any blender or food processor. Just use a liquid sweetener instead of dates (what I am going to use for the chocolate glaze) and everything is fine. Feel free to try this delicious coconut fluffy cake recipe and you will be amazed!

The ingredients that we need for this amazing looking goodies are:
cake crust
a pack of rice cakes or even rice flakes
2-3 tbs of liquid sweetener of choice, use agave nectar if you want it to stay white
2-3 tbs coconut oil
coconut cream layer
100-150 g coconut flakes or fresh coconut pulp
3-4 tbs agave nectar
3-4 tbs coconut oil
400 ml coconut milk (you can either make your own or buy some organic delicious coconut milk until you learn how to do, but it is actually really simple, just mix some coconut pulp with water and a sweetener of choice and you have got delicious coconut milk, YUM!)
chocolate glaze
1/2 cup coconut milk or the water from soaking the dates
100 g soaked dates
50 g carob powder
3-4 tbs coconut oil.
Now that we have the ingredients let`s see what we have to do in order to prepare our lovely cake. To make the crust we mix the rice flakes or the rice cakes (first we crumble them into smaller pieces either using a blender of even our own hands, it is really easy, just try it) with the sweetener and the coconut oil. Next step is making the coconut cream and for this we just put all the ingredients into a bowl and then simply mix them with a spoon. If the coconut oil is solid just leave it in a nice warm place for a few minutes to melt and then it is ready to use. The final step is making the chocolate glaze. So, for this step we will use a blender if we are using dates but if you decide to replace the dates with a liquid sweetener then you no longer need a blender. We just blend or mix all the ingredients together until we have a smooth and creamy consistency and then our glaze is ready.

Now we just put our crust, coconut cream and chocolate glaze on top of each other and we have got ourselves a yummy and delicious, fluffy and creamy coconut cake. We can sprinkle some more coconut flakes on top and maybe even some carob powder if you enjoy it`s texture and then we can put it in the fridge for a while or enjoy it right away.
