Stuffed Bell Peppers

I am strong believer in the power of eating what we love and loving what we need. Of course in order to do that the food has to be absolutely beautiful and making beautiful raw and vegan plates is one of my favorite things that I just love doing. When it comes to getting together beauty and nutrition there are definitely lots of good things happening in our bodies when we choose a healthy lifestyle. We are then able by doing this to enjoy the beauty of each day and be happy of whatever we have got going on in our lives as it is all just a wonderful experience of unfolding greatness.

Bell peppers are absolutely adorable and they are so full of color and joy. I love to incorporate those goodies in raw vegan spreads or salads but I also like to just enjoy them as they are and get some delicious stuffing inside them. This way they look absolutely divine and they definitely taste amazing. I also used some rice here, which is cooked but if we wish for a fully raw recipe we can replace the rice with some chopped cauliflower which will look just perfect as well. And cauliflower has a great taste also, so feel free to use whatever you feel fits your own tastes better.

For making this recipe we need the following ingredients:

2 bell peppers

1-2 cups of rice or cauliflower

2-3 tbsp nutritional yeast

2-3 tbsp cold pressed sunflower seed oil

2-3 tbsp mix of seeds: sunflower, sesame, chia, pumpkin, flax seeds etc

2-3 tbsp of marinated sun dried tomatoes.

We mix the rice or cauliflower with the mix the seeds, kale, cold pressed oil and nutritional yeast and we stuff our peppers. Then we put the rest of the rice/ cauliflower on a beautiful plate, sprinkle some oregano, nutritional yeast, kale and sun dried tomatoes and we place our bell peppers on top of the rice. Final step is to make a cashew sauce, which is done simply by blending some cashews with lemon juice, nutritional yeast and water, as much as needed. When the sauce it ready we pour it on top of the bell peppers and sprinkle with some more seeds and dried oregano.
