Almond Christmas Cake

Christmas is coming and I can`​t wait to get to my kitchen and try all kinds of delicious recipes for healthy goodies that are absolutely perfect for the Christmas meal and also for any other day before or after Christmas, those recipes are so great that you can actually enjoy them at any time of the year. I just like to call them so because I use ingredients like: fresh oranges, nuts, cinnamon, ginger and other flavors that remind me of Christmas , but beside this thing they are just great for any occasion that you wish to bring them to. Christmas is pretty close now so I`m starting this Christmas season, here on my blog, with a delicious, healthy and fulfilling almond Christmas cake. You are just gonna love it!

This almond cake is absolutely delicious and it is really easy to make. It brings together the wonderful tastes of cinnamon and oranges, ginger and almonds, and of course my favorite of all times: delicious coconut flakes. For making this recipe we need the following ingredients:

100 g almonds

100 g dates

3-4 tbsp coconut oil

orange zest

100 g coconut flakes

cinnamon powder

fresh ginger.

We use a food processor to mix the ingredients for the cake crust and process them until we get a thick and sticky consistency. We spread this mixture and make two layers for our delicious cake. Then we go on to the next step, which is making the caramel cream filling. For the caramel cream filling we need the following ingredients:

100 g dates

3-4 tbsp coconut oil

1/2 cup water

juice of one orange.

We blend the ingredients for the cream filling until we have a smooth and creamy consistency and then we combine them with the crust layers in the following way: one layer of crust, one layer of cream, another layer of crust and then the final topping of caramel date cream. The last step is to sprinkle this beautiful looking delight with some amazing coconut flakes and then we put it in the fridge for a while and allow it to settle. When it is ready we can take it out and slice it.
