Salads are absolutely great and I love to use lots of greens, veggies and fresh spices in order to get as much nutritious goodness as possible. When it comes to beans, I like to slightly cook them after soaking them overnight. Some of the plants that come from this family can also be used sprouted and without being cooked. So feel free to use your chickpeas sprouted or slightly cooked, the taste is great anyway. I have started to use more fresh spices recently instead of dried ones and I find this to be a delightful experience as the flavors are more strong and they just bring more delight into this whole picture of choosing healthy and nutritious foods.

For making a chickpea salad we need the following ingredients:
2-3 cups mixed greens (I used baby spinach, romaine, valerian salad)
a few fresh basil leaves
2-3 tbsp dried tomatoes
2-3 tbsp nutritional yeast
2-3 tbsp mix of seeds (I used sesame, pumpkin, sunflower, chia seeds)
1 cup cooked/ sprouted chickpeas
a few olives.
All you have to do now is to just mix your greens and basil with the chickpeas and the mix of seeds and then add on top of this beautiful salad the nutritional yeast flakes, olives and dried tomatoes. It tastes absolutely divine!
