I love avocados, they are so creamy and delicious and they just make amazing raw vegan spreads, desserts and many other delicious vegan treats. They are a wonderful source of healthy and nutritious fats and they also go well both with veggies and with sweet foods, for example we can use them as a delicious ingredient in a creamy, tasty soup or spread or as a delightful add to a raw vegan dessert. Today I would love to show you how to make an absolutely amazing raw vegan soup using, you guessed it: some delicious, creamy and dreamy avocado goodness.

Here are the ingredients that we are going to need in order to make this delicious and creamy, raw vegan avocado soup:
1 ripe avocado
juice of 1 lemon
a few baby spinach leaves
1/2 cup to 1 cup of water (depending on how thick you want your soup to be)
3-4 tbsp nutritional yeast flakes
basil, oregano or any other herbs of choice.
Now, all we have to do is to just put all the ingredients in a blender and mix them until perfectly smooth, creamy and amazing. When the soup is ready, you can take it out of the blender and pour it into a nice looking bowl, sprinkle it with some delightful and colorful sprouts and some mixed seeds such as sunflower, flax seeds, pumpkin, sesame, which are a great source of Omega-3 fatty acids (anti-inflammatory properties, healthy source of fats, protects arterial function, critical for optimal health), those little seeds being responsible for bringing even more goodness and nutritional benefits into this beautiful picture.
