There are many things in life that might be out of our control but  when it comes to the foods that we choose to put on our tables I truly believe that we do have the power to decide for ourselves, to take care of our own health and even to learn to improve the choices that we might not be so proud of at any given moment in time. Many people get scared from simply hearing the word “vegan” or anything related to a plant based diet or lifestyle simply because their own beliefs are so deeply rooted into a traditional approach which presents some food groups as elementary pillars and even as the only “sources” of some specific nutrients, but the truth is that the more informed we are the easier it gets for us to be able to make healthy, more conscious and aware choices. And the good thing is that we do not even have to change it all at once, just start with what looks appealing to you and then you will be able to find your own way into a healthier, more joyful and fulfilling lifestyle.

When it comes to making food transitions from one type of dietary approach to including new elements into ones own daily meals, one very important role in order to feel happy and fulfilled about including those new foods is to make them taste amazingly delicious. Of course, the way the food looks also plays an important role in the mind of the eater in order to achieve also this fulfillment and joyous attitude towards experimenting with new foods.

One way in which I believe we can benefit tremendously from the enormous benefits that plant based foods are able to bring into our lives is to make a simple and delicious veggie spread, in this case an absolutely delicious sun-dried tomato spread. YUM! I truly believe that you are going to definitely love this tomato spread. It is raw, is tastes amazing and it looks amazing to!

Here are the ingredients that we need in order to make this delicious and tasty raw vegan recipe:

2-3 tbsp sun dried tomatoes

5-6 cherry tomatoes

100 g soaked sunflower seeds

juice of 1 lemon

1/2 cup water

2-3 tbsp nutritional yeast flakes.

We use a blender to blend all the ingredients for the sun dried tomato spread until this mixture gets a perfectly smooth consistency and then we take it out of the blender and pour it into a nice looking bowl of choice.

Final step is to decorate our delicious sun dried tomato spread with some seeds, nutritional yeast flakes, finely chopped sun dried tomatoes, olives, and sprinkle it with some delicious and nutritious sprouts.
