Spring is here, the weather outside is so amazing and soon there will be a plenty of fresh, locally grown products available on the market but until then we have still got to find some affordable alternatives to feed ourselves properly. Of course we can find fruits and legumes at the supermarket during the whole year but nothing compares to the taste of fresh, locally grown produce. Until more fresh produce is available on the market we can still count on the amazing properties and nutritional benefits of sprouts which are a great source of nutrients in such times of the year when we are still waiting for the summer season. Sprouts are easy to grow at home but they can also be found pretty much in any supermarket nowadays and this makes them a precious food choice that is so easy to make and accessible to us at the same time.
For this bell pepper and sprouts bowl recipe we are going to use the following ingredients:
100 g soaked sunflower seeds
juice of 1 lemon
1/2 cup water
1-2 tbsp dried tomatoes
1 tbsp cold pressed olive oil
1-2 tbsp nutritional yeast flakes
1/2 red bell pepper
sprouts
spices such as: garlic, oregano, basil, etc.
We use a blender to blend all the ingredients, leaving the sprouts aside for now, and process this until we get a smooth and creamy consistency for our mixture. When our bell pepper cream is ready, we can take it out of the blender and pour it into a nice looking bowl of our choice. Next we decorate our bowl with the sprouts and we can also use things such us : chopped bell peppers, cherry tomatoes, dried tomatoes, oregano, basil, or even nutritional yeast flakes and a mix of seeds.

Finally, when our bowl is ready we can serve it right away and even share it with our lovely friends and family members. Feel free to integrate any spices of your choice that you feel might please your own tastes. I truly believe that being able to find what foods are actually good for our health and taste amazing to us is a wonderful approach to having a healthy, balanced life. When we love the foods that we are eating than we are more likely to follow through into this healthy and awareness based lifestyle and let go of any other pressures or illusions that we might have about living a healthy life. Being healthy is all about fulfillment and joy and most importantly about learning to be always true and kind to ourselves and to others as well.
