Spicy Carrot Spread

Carrots are a great way to enjoy some crunchy and delicious veggies and you can basically make all kinds of recipes with them. Starting from juices and veggie spreads and going on to soups, salads and delicious dishes, carrots are definitely a great source of fiber, delicious nutrients and other healthy goodies. Carrot are just so beautiful and have such an intense, amazing color that is just going to make you want some more. What I like most about carrots is their crunchy and delicious texture and I just love to add then to salads, spreads, soups and all kinds of raw vegan recipes. I must admit that sometimes when it comes to chopping them I find it a little bit hard to take that time and patience to actually do this, but after all it is definitely not such a big struggle and the result is absolutely delicious. Usually I do prefer to add then to spreads or to just chop then in a food processor. In that way everything gets so much easier and way more joyful.

Carrot spread

This spicy carrot spread is absolutely amazing and I just love to enjoy it as a breakfast, snack or even as a lunch meal next to a big salad mix and some delicious rice cakes. This being said, now lets see what ingredients we need in order to make this delicious and crunchy spicy carrot spread.

2-3 carrots

1/4 cup sunflower seeds

juice of 1 lemon

1/2 cup water

3-4 tbsp coconut oil

3-4 tbsp nutritional yeast flakes

a small piece of ginger

3-4 tbsp almond milk.

We use a blender and mix all the ingredients well until we get a thick and sticky consistency, which we can then take out of the blender and transfer into a nice looking bowl. Next step would be to add some oregano or basil or any other spices of choice and mix them all together. When the carrot spread is ready we can take it and spread it on top of some delicious  raw vegan crackers, rice cakes or any other crackers of your choice and when we are done spreading it we can add some seeds, spices, or any other toppings of choice and our delicious carrot spread crackers/rice cakes are ready to be served. I used some rice cakes to serve this delicious spread with and it tasted absolutely divine.
