Summer time is here and it is a wonderful time to try some delicious raw vegan soups and soup recipes. I think that raw vegan soups are great simply because they are so easy and simple to make and they are just so refreshing and hydrating to the body, especially now in the summer time when our bodies need lots of nutritious sources of hydration as well as delicious and beneficial nutrients. Plant foods are a great source for both hydration of the human body as well as a great source for providing all those nutrients that the body needs in order to be able to thrive. Finding good plant sources might sometimes be challenging, but now that summer season is starting out, it looks like there is definitely going to be plenty of delicious products out there on the market so lets enjoy the beauty of fresh, crisp, raw vegan foods.

For this delicious raw vegan tomato soup recipe we need the following ingredients:

2 ripe tomatoes

1 avocado

juice of 1-2 lemons or limes

1/2 cup water.

First we blend our ingredients for the raw vegan soup by using a blender and blend them until they reach a creamy and smooth consistency, then we can move on to our next step which is adding some delicious veggies to our soup. I, for example used for my soup bowl some sliced tomatoes, sliced avocado, dill, a mix of seeds and of course we can also add some other healthy plant based goodies such as tofu or whole rice. If we just want to keep it raw we can add sliced carrots, some cashew cream, nutritional yeast flakes and even chopped cauliflower that is just going to make our raw soup taste amazing. When the soup is ready we can serve it right away and enjoy its delightful taste.
