Broccoli is an absolutely amazing veggie, it is rich in dietary fibers, lots of vitamins and minerals such as: vitamin B6, Vitamin C, vitamin B1, vitamin K, calcium, iron, magnezium, zinc, sodium, etc which means that it is actually a great source of plant based nutrition. Broccoli is great for relieving inflammation and also promotes the ability to regulate blood sugar levels which is great in diabetics but also with pretty much everyone. Broccoli can be consumed both cooked and raw, but I really love its taste when it is raw so today is all about delicious raw vegan broccoli plant based nutrition. Today s recipe is a delicious and crispy broccoli salad with lots of fresh goodies and a sprinkle of delicious creamy sunflower seeds cream spread. YUM!

For this delicious broccoli recipe we need the following ingredients:
1 medium broccoli
4-5 stalks of celery
oregano
juice of 1 lemon
mix of seeds: sesame, sunflower seeds, flax seeds, pumpkin seeds.
Now we chop the broccoli and the celery stalks into small pieces and we mix them all together with the other ingredients by using a mixing bowl. Next step is making our delicious tomato and sunflower seeds spread and for this spread we need the following ingredients:
1/2 cup sunflower seeds
juice of 1 lemon
3-4 tbsp nutritional yeast flakes
1-2 tomatoes
a few dried tomatoes.
We use a blender to mix all the ingredients together and we also add around 1/2 -1 cup of water to the mixture in order to make it creamy and smooth. When the sunflower seeds spread is ready we can take our broccoli salad, put it on a nice plate and decorate it with the delicious seed spread. Finally, we can add some more seeds, nutritional yeast flakes and oregano on top and our beautiful broccoli salad is ready to be served.
