Amaranth is a wonderful grain that is filled with fiber and protein, which are great for vegans who are looking for a protein boost as well as for non vegans looking for some pretty awesome plant based protein sources. Yes, plants have proteins as well and this is wonderful as they come packed with lots of nutrients and healthy and delicious vitamins and minerals. Amaranth is a great alternative for people looking for naturally gluten free products and can be used as a gluten free option along with buckwheat, rice, corn and so many other plant based goodies. Amaranth can be found in many shapes such as flakes, seeds, flour, etc. It can be used for main dishes as well as for delicious and nutritious desserts. This time I have decided to try amaranth to make some some yumy and delightful amaranth roll.
For this recipe, we are going to use the following ingredients:
1 cup amaranth flakes
1/2 cup figs
1/2 cup coconut flakes
3-4 tbsp coconut oil
3-4 tbsp agave nectar
maca powder
cinnamon
lucuma powder.

We use a food processor to mix all the ingredients together until we get a thick and sticky consistency and then we move on to the cream layer for our delicious amaranth roll. For the cream filling we are going to use the following ingredients:
1 cup figs
1/2 cup almond milk
3-4 tbps agave nectar
3-4 tbsp coconut oil
3-4 tbsp chia seeds.
We use a blender to mix all the ingredients together, with the exception of the chia seeds, and blend until we get a smooth and creamy consistency, then we add our chia seeds, mix them into the cream filling with a spoon and allow our cream filling to sit for around 10-15 minutes in order to get a jam like consistency. When it is ready we can make our roll by putting together the dough with the cream filling, then we allow it to sit in a fridge for a while to get a firm texture. Finally, we can slice it and enjoy a delicious piece of this beautiful and amazing raw vegan goodie.
