Broccoli is a wonder source of plant based nutrition as it is filled with vitamins, minerals and lots of fiber as well. Brocolli can be served cooked or raw, but even though it has a little bit of a tough texture when eaten raw, I find it pretty cool to just enjoy its crunchyness, which can still be softened by adding some lemon juice or any kind or nut or seed cold pressed oil on top of it making it taste and feel even more delicious. I also love the bitterness of arugula and I found that those two veggies make a wonderful team together and I just love to mix them together into a delicious and nutritious, healthy and fulfilling veggie salad. YUM!

This broccoli arugula salad recipe is based on combining both soft and cruncky texture to make it a palatable and wonderful experience. Food is nourishment both for our bodies and our souls, so by making food tasty and appealing we get both amazing nutrition and delightul taste and texture at the same time. What a blessing! So, for this delicious salad recipe, we are going to use the following ingredients:
1 cup arugula
1 cup chopped broccoli
1/2 avocado
5-7 chopped cherry tomatoes
5-7 olives
1-2 tbsp mix of seeds
1-2 tbsp nutritional yeast flakes
juice of 1/2 lemon.
We mix all the ingredients together in a bowl and them when everything is mixed up, we can served our delicious salad on a beautiful plate of choice. We can top the salad with some veggie dressing as well, like for example some dried tomatoes salad dressing and it is all going to taste just divine. Serve it next to some raw vegan cracker or even next to some rice cakes and everything is just amazing! YUM!
