Today s recipe is an absolutely delicious Christmas Cake that can be, of course, served at any time of the year, but the way it looks its just in sync with those times of the year. Winter is here and we do need to be feeding ourselves properly, as well as be able to take care of our bodies in order to be in a state of proper health. Of course we can still celebrate the holiday spirit with some delicious goodies, that are not only raw vegan and amazingly tasting, but also very fulfilling and absolutely nutrient dense foods. The raw vegan desserts are a great choice for a tasty treat during the holiday season, at any time of the day, and not only, we can also enjoy the raw vegan goodness all year around, it just simply tastes and feels amazing!

For our delicious Christmas Cake recipe we are going to use the following ingredients:

Cake Crust:

1 cup coconut flakes

1 cup buckwheat flakes

1 cup raisins

3-4 tbsp agave nectar

3-4 tbsp coconut oil

cinnamon

juice of one orange.

We use a food processor to mix all the ingredients together until we get a thick and sticky consistency and then we can put our cake crust on the bottom of our cake form of choice.

Christmas Cake 2

Cream Filling

1 cup soaked dried figs

3-4 tbsp agave nectar

3-4 tbsp coconut oil

1 cup almond milk

juice of one orange.

We use a blender to mix all the ingredients together until we get a creamy and smooth consistency, and then we can pour our cream filling on top of our cake crust.

Finally we can add some berries on top of the cream filling and then sprinkle some more coconut flakes, buckwheat flakes for an even fancier look for our delicious and nutritious Christmas Cake. When the cake is done, we can put it into the freezer for a few hours and then it is ready to be sliced and served. YUM!
