Today`s recipe is a delicious mix of spicy from the ginger and sweet from the carrots, while also bringing a soft touch of a creamy and delightful texture due to the smooth consistency of our soup. Ginger is great in winter as it has the amazing ability of naturally and gently warming up the body and it is also a great spice to use when we catch a cold or if we just simply want to prevent catching a cold. During the winter season, especially because of the temperatures droping down, we do have to take even greater care of our amazing bodies in order to be able to live a happy, healthy and fulfilling life. This delicious raw soup is all that you need to warm you up during a cold winter day. YUM!
For this soup recipe we are going to use the following ingredients:
5-7 medium carrots
1 cup coconut milk
1/2 cup lemon juice
1-2 tbps cold pressed coconut oil
1-2 tbsp ginger.

We use a blender to mix all the ingredients for our soup and mix them until this mixture gets a smooth and creamy consistency. If you want your soup to be even creamier, you can just cook the carrots for a little while, allow them to chill and then mix them with the rest of the ingredients. A little bit of cooked food does no harm, it can still be beneficial for our bodies if we do take proper use of all the nutrients that our bodies need. Finally, when the soup is done, we can pour it into some nice looking bowls of choice, top it with some tofu, sprinkle some mixed seeds or any herbs of choice and our delicious soup is ready to be served.
