Blueberry Cake

Today`s recipe is a delicious and absolutely amazing mix of sweetness from some fluffy dates and a little bit of sourness from the blueberries which are a key ingredient in this recipe. This cake has a really fluffy and thick consistency, it is totally filling and satiating and it is a great example of a healthy and delicious dessert. This cake is of course raw, and it smells just like summer times. Blueberries are great and even if they are not in season for now, we can still find amazing frozen blueberries and all other types of berries which are just as delicious and nutritious as the fresh ones, especially if they have been frozen at their ripeness peak. YUM!

For this recipe we are going to use the following ingredients:

1 cup buckwheat flakes

1 cup coconut flakes

1 cup dates

vanilla extract

1 cup blueberries

3-4 tbsp coconut oil

3-4 tbsp lemon juice diluted in 1/2 – 1 cup of water (depending on the consistency that you desire for your own cake).

We use a food processor to mix all the ingredients together until we get a thick and sticky consistency, then, when the mixture is ready, we can transfer it from the food processor into a kitchen form of our choice. For my cake I chose a simple round form and put my beautiful cake into it and decorated it with some more coconut flakes and colorful blueberries for an even greater look. Then I moved the cake into the fridge for a few hours in order to allow it to get the desired cosistency. After a while, we can take our amazing and delicious cake out of the fridge and slice it so that it can be served right away or we can even save some slices for later servings.
