Avocado Soup

Today`s recipe is an absolutely delicious and nutritious mix of raw vegan goodness and it goes perfectly with some fresh and beautiful salad mix and some raw vegan crakers or even rice cakes to give it a slight touch of crunchiness. This soup is really easy to make, it tastes amazing and it is great for the spring and summer times as it can be served cold and it still tastes delightful. Avocados are, of course, available at the supermarkets all year around, but salads and fresh greens are really in season now that spring is here and everything is getting as green as possible. I love using avocados for both smoothies and spread, but I also enjoy serving them as delicious veggies soups along with other delightful treasures of the nature s garden. I also use baby spinach leaves both for smoothies and spreads, but today is all about soups, so yum!

For this recipe we are going to use the following ingredients:

juice of 1 lemon

1 cup of water

1 avocado

2-3 tbsp sunflower seeds

1-2 small cloves of garlic

1 cup baby spinach leaves or more if desired

2-3 tbsp of nutritional yeast flakes.

We use a blender to mix all the ingredients together until we get a smooth and creamy consistency and then when the soup reaches the desired texture, we can take it out of the blender and pour it into a nice looking bowl of choice. We can decorate our delicious soup with some fresh salad mix, a few olives and sprinkle on top of it some more sunflower seeds for a cruchy touch. We can serve it with raw vegan crackers or rice cakes and we can even keep it in fridge for a while for later servings.
