Coconut Apple Cake

Well, well, summer is officialy here so it is time to party with some delicious and nutritious raw vegan goodies! YUM! Today`s recipe is a super healthy and fulfilling apple cake, that is both sweet and tender, as well as crunchy and spicy, making it a perfect dessert for a beautiful afternoon, as a healthy snack or even as an energizing breakfast. It can be made in just about 10-15 minutes and it is ready to be served right away. It does not require any more time to settle or harden, it can just be served right after making it. YUM, again! I love to add coconut flakes to pretty much anything that is sweet, any cakes that I make, cookies, smoothies or fruit salads so I have decided to add some coconut deliciousness to this apple cake as well.

For this recipe we are going to need the following ingredients:

1 medium apple or 2 small ones

1 cup oat flakes

1 cup raisins

1/2 cup coconut flakes

1/2 cup water/ nut drink

cinnamon

ginger.

We use a food processor to mix all the ingredients together until we get a thick and sticky consistency and then, when the cake dough is ready, we can take it out of the food processor and put it into a nice shape of choice. I have chosen a round cake form for this time but you can shape your cake in any form you wish: rounds, balls, squares, just choose whats resonating with you by the time you are making this cake. Next, we are going to slice 1/2 apple into thin slices which we are going to use to decorate the top of our cake. When we are done with that, we can sprinkle some more coconut flakes, cinnamon and even some agave nectar or coconut sugar for an even sweeter taste. Super YUM!
