Well, well it looks like summer is gonne now, but there is no need to get sad or anything like that because we can still make all kinds of delicious and nutritious raw vegan dishes even if there isn`t going to be that much of an abundance of fresh produce on the market. Some things like basil, mint and other spices we can find in pots at the stores all year around, making it easy to have fresh basil, mint or another spice at any time. There are also dried fruits, seeds and nuts which are also available all year around, so we have definitelly got lots of options to choose from. Of course we also need fresh fruits and veggies in order to have a healthy, balanced life and since autumn is here, great news: apples, pears, plums and all kinds of other beauties are now in season. Raw vegan life is absolutely amazing and super delicious, that is for sure! YUM!
For today`s recipe we are going to use the following ingredients:
1/2 cup soaked sunflower seeds
1/2 cup soaked sun dried tomatoes
1/2 cup water
1-2 cloves of garlic
fresh basil
2-3 tbsp nutritional yeast flakes
1/2 cup chopped red pepper.

We use a blender to mix all the ingredients together until we get a smooth and creamy consistency. When our spread is ready, we can take it out of the blender and pour it into a nice looking bowl or jar of choice. Then we can allow it to sit in the fridge for a while or we can just serve it right away. It has got a nice consistency and it is also really fulfilling and delicious. It can also be kept into the fridge for up to two days. After that it might not be that good anymore and the nutrients won`t be that many anymore compared to eating it right away, but just do what suits you best and know that raw vegan goodness is welcome at all times.
