It is getting cold now since there has been already autumn for more than one month, but the weather is pretty nice and we can still be enjoying all kinds of delicious fruits and veggies even if it is not summer anymore. Carrots are great since they are available at any time of the year and they can be pretty easy to find, at an accesible price, from local producers and they are totaly great for wellbeing and health. Carrots are mostly used for things such as main courses, soups, salads and even as a garnish along with another dish. But carrots can also be used for sweet things such as juices and desserts like a beautiful and delicious carrot cake. Carrots can be combined with all kinds of amazing ingredients in order to make a delicious and nutritious vegan or raw vegan meal.
A carrot hummus is also a great recipe and it can be both used as a snack as well as a main course along with some veggies or a beautiful salad mix, so for todays recipe, we are going to use the following ingredients:
2-3 medium carrots
3-4 tbsp coconut flour
1-2 tbsp nutritional yeast and oregano mix
1/4 cup olives
1/4 water
1 cup chickpeas (sprouted or cooked).

We use a food processor for making this recipe and we mix all the ingredients together until we get a thick and sticky consistency. When our carrot hummus is ready, we can take is out of the food processor and serve it on a nice looking plate or into a nice looking bowl of choice along with some chopped cherry tomatoes and some delicious, fresh and nutritious salad mix. I used a mix of radishes, chicory and romain salad for my plate and it tasted absolutely divine along with the cherry tomatoes and a just a little bit more of the oregano and nutritional yeast mix.
