Carrot Cake

I personally love carrots, but I always postpone eating them just because it seems a little bit difficult to prepare them for being eaten. Other that that, I absolutely love enjoying salad mixes with carrots, carrot soups and spreads and recently I have also tried making a cake with carrots. I know it is a pretty well known recipe, but I have been a little reticent until now about trying it. I tried to make it only once, but it didn’t taste good at all, but this time it turned out pretty well. I think it was also the hemp cream that helped, as well as using coconut flour for the cake dough that made it really delicious and actually taste like a dessert recipe. The other time I tried to make this, it was the taste a carrot that was way to strong for a cake.

So, for this recipe we are going to use the following ingredients:

1 cup of shredded carrots

1 cup coconut flour

1/2 cup orange juice

1 tbsp cinnamon powder

1 tbsp ginger powder.

We use a food processor to mix all the time together until we get a thick and sticky consistency and then we can take it out of the food processor and make our delicious cream filling.

For the cream filling we are going to use the following ingredients:

1/2 cup hemp seeds

1 cup orange juice

1/2 cup agave nectar

1/2 cup coconut flour

1 tbsp macca powder.

We use a blender to mix all the ingredients together until we get a creamy and smooth consistency and then we can take it out of the blender and assemble our cake by alternating layers on cake dough with the cream filling.
