Red Pepper Soup

Todays recipe is a creamy and delicious soup that is great for the autumn season. It is sweet and smooth and it can be served right away or it can be kept into the fridge for up to two days. Of course, when it comes to raw foods, but also pretty much any foods, it is best to be served at their nutritional peak, the more the sit, the less nutritional value they will have, but there is no need to worry. There is still going to be plenty of nutrients available evem when serving a dish at a later time so just do what works best for your own schedule and life style and allow yourself to just enjoy the moment as it unfolds. Raw vegan lifestyle is awesome and amazing and and still there is always a good idea to enjoy a raw vegan meal even if you are not fully embracing this lifestyle or not fully embracing this lifestyle yet. Raw foods are definitely great for all of us.

So, for todays recipe we are going to use the following ingredients:

2 red peppers

a few soaked dried tomatoes

1/2 cup cashews

juice of 1/2 lemon

1/4 cup onion.

We use a blender to mix all the ingredients together along with 1 cup of water (more of less depending on your own prefferences for the consistency of the soup) and blend until it gets a creamy and smooth consistency and then, when our delicious and amazingly good looking soup is ready, we can take it out of the blender and pour it into some nice looking bowls of choice. With those amounts of ingredients it should make approximately two servings of this nutritious soup.
