The holiday season is officially here, since its December already and its really great and fun for us all holiday lovers. The winter holiday is such a great time for sharing and caring, spreading love and diving deep into a beautiful mindset focused especially on abundance and kindness. Yum, yum, yum! There is also a time for enjoying lots of delicious holiday and seasonal goodies, pies and cakes, special recipes, oh, this is really fun! Its also that time of the year when we like to dream a little bit more, have a little bit more hope and embrace more easily a positive and abundant mindset. Its absolutely divine! And it is at the same time, a great chance for us all to explore our creative resources by decorating our living spaces, enjoying the magic of holiday lights and also lots of creative foods and food related activities, as well as fun and joyful ones, like ice skating, skiing or just taking a day trip to the mountains to rest and replenish.
Today`s recipe starts this holiday season in such a beautiful and delicious way and it definitely proves that holiday goodies can be both healthy and delicious. For this recipe, we are going to use the following ingredients:
1/2 cup veggie yogurt, vanilla flavor
1 banana
3-4 tbsp coconut oil
1-2 tbsp agave nectar
1/2 cup nuts
1/2 cup dried figs
1/2 cup mix of oats, raisins and coconut flakes.
We use a blender to mix the banana, veggie yogurt, coconut oil and agave nectar and blend until we get a creamy and smooth consistency. The we are going to use the food processor to mix the nuts and figs and add a little bit of coconut oils and vanilla for even more deliciousness and we mix them until we get a sticky and thick consistency. When those two layers of our delicious pudding cup are ready we can alternate them one by one with the oats mix as well, and then add some more oats, coconut flakes and raisins on top of our pudding for the final touch. This pudding can be served right away, or it can be kept into the fridge for a few hours and enjoyed at a later serving. With the amounts given it should make around two small cups or a large one.
