Christmas time is such a beautiful time of the year, there are Christmas lights and decorations everywhere, the store windows and the stores have them, the city is all decorated with beautiful light installations and ready for the Christmas celebrations. It all looks just divine and amazing as it seems like the city is now even filled with cheer and joy. Christmas carols and Christmas songs are playing all around the city, inside the Christmas market and inside peoples houses. There are also lots of decorations at the windows or we can even see the Christmas trees lights blinking at night from the peoples houses and apartments. I have also noticed that in some places, people are also decorating the entrances of the buildings they live in and of course there are lots of Christmas decorations inside offices and other public spaces. I love Christmas lights and Christmas decorations so I have got to say that for me, this looks just divine and beautiful!
Christmas is of course a time for indulgence for many of us, so the Christmas healthy goodies are ready to be prepared and served by joyful and cheerful people and families. This being said, lets embrace the idea that Christmas can be delightful and filled with healthy and nutritious dishes as well and lets get ready for preparing todays recipe which is a super delicious and nutritious mix of holiday cheer, beautiful colors and tasty and warming winter spices. Yum!

For this recipe we are going to use the following ingredients:
1 cup millet flakes
1 cup peanuts
1/2 cup carob powder
1/4 cup mix of winter spices (cinnamon, cardamon, ginger, anise stars etc)
3-4 tbsp coconut oil
3-4 tbsp agave nectar or maple syrup.
We use a food processor to mix all the ingredients together until we get a sticky and thick consistency. When our cookie dough is ready, we can take it out of the food processor and start making our cookie shapes by using a cookie cutter or just simply by hand. When the cookie shapes are ready, we can sprinkle them with some more maple syrup and add some macca powder, orange zest and guarana powder on top. Then we have two options from here right on: we can allow them to sit into the fridge for a while in order to firm up or we can dehydrate them for a more crunchy texture, more like the traditional ones, baked in the oven. Of course, the cookies can also be served right away. If so, their texture will be just a little bit gooey and soft, but the taste, still divine!
