Veggie Salad Mix

Veggies are a pretty important part of a healthy balanced diet, and they are even more important when it comes to making sure that we get all the nutrients and things that we need from our foods in order to be and stay healthy, happy and fulfilled. People might be thinking that they are getting their veggie intake from things like fried potatoes and over boiled broccoli and so, but this is not the case. We don`t just need veggies, we also need them to be raw. So yeah, sure, you can still get your cooked foods to be served with your meals, but what is best when it comes to nutrition and well being is to get some delicious and colorful servings of raw veggies and greens too. Many people might be afraid of greens at first, but in the end it turns out that they can be super delicious and nutritious as well. Salads are a great way to enjoy lots of veggies and greens at the meal time so that is why today`s recipe is a super tasty and great looking salad mix. Feel free to make your own mix and experiment in order to find what fits your own tastes best. There are a lot of options available out there on the market both for veggies as well as for greens. Yum!

For this recipe we are going to use the following ingredients:

1 cup soaked buckwheat

1 cup tofu

2-3 tbsp caraway

1 tbsp oregano

1 tbsp basil

2-3 tbsp nutritional yeast flakes

veggies mix (I used for this: celery, bell pepper, leek and carrot)

greens mix (I used for this: radicchio, romaine, baby spinach, endive).

We add all the ingredients to a big salad bowl or mixing bowl of choice and we mix them together until they all blend perfectly. If desired, we can add to this delightful salad some cold pressed oil such as sunflower seeds oil or olive oil, and we can also add some olives in there too.
