Its spring time and the sun is shinning outside as I am writing this week`s post. It is truly amazing and divine to see how the day grows back again and we are all enjoying more hours of natural light on a day to day basis. Super fun! As the spring is here now and since its the beginning of March I have decided to share with you today a super delicious and nutritious, creamy and dreamy soup that is just so filling and nourishing both for body and for spirit. Yum! Cream soups are a wonderful choice for an easy and simple to make raw vegan lunch, but they can also be served for dinner just fine. Raw vegan soups are super nourishing and delicious, it takes only 10 minutes to make then, can be served right away or they can be taken with you as well and enjoyed through out the day. Its a great to stay both hydrated and nourished by consuming those delightful goodies.
For todays recipe, which is a cauliflower tomato soup, we are going to use the following ingredients:
3 small tomatoes
3-5 sundried tomatoes
1 and 1/2 cups of chopped cauliflower
juice of 1 lemon
1-2 cups of water (depending on how creamy and how thick you want it to be)
pinch of himalayan salt.

Now we have two options: we can either blend all those ingredients together or we can leave the cauliflower as it is and add it to our delicious soup as it is done, creamy and smooth. When the soup is ready we can take it out of the blender and pour it into a nice looking bowl of choice. Then we can add on top of it some more dried tomatoes, some sprouts as well as some corn flakes or any other cereal flakes for a bit more crunchiness which goes perfectly with the smooth texture of the soup. You can serve it right away or keep it in the fridge for about 24 hours for a later serving. If you leave it for more than that amount of time, it might start loosing some of its nutritional benefits, so just do what fits your own style best and serve it as close as possible to the time where you are actually preparing it.

I truly believe that when we take care of our bodies and nourish ourselves with the most nutritious and fulfilling plant based foods available to us at all times, then we are really able to reach our full potential and live life to its fullest.
