Olive Garlic Spread

Well, I have to say that until recently I haven`t really been using salad dressing on a regular basis. I mean of course I would make all kinds of pates and spreads, but I would just simply serve them next to the salad and not necessarily mix them all together. But, since in the last weeks I have been focused on lowering my carbs intake and increasing my healthy fats intake, just to see how this would work, I found myself adding all kinds of healthy sources of fats to my daily lunch salad. Those would be things like avocado, olive oil, flax seed oil, and of course delicious and nutritious salad dressing. I think for me, the only difference between a spread and a dressing would be the amount of liquid that is added into the recipe, so for the sake of this time of embracing home made salad dressings, today s post is going to be just about that: a super delicious and nutritious veggie spread that can also be served as a salad dressing.

For this recipe we are going to use just a few simple ingredients:

1/2 cup olives

1/2 – 1 cup of water (depending on whether you want if to be thicker also known as a spread, or thinner and use it as a dressing)

juice of 1 lemon

3-4 cloves of garlic

3-4 tbsp nutritional yeast

spices of choice: I used oregano for mine, but there are also plenty of possibilities such as basil, parsley and so on.

We use a blender to mix all the ingredients together and blend them until we get a creamy and smooth consistency. This delicious spread or dressing can be used right away or it can also be kept in the fridge for a few days for later servings. When served it can be poured on top of a delicious salad, or spread on some rice cakes or even on top of veggie slices or cubes. Yum!
