I have been playing around lately with this idea of lowering the amount of carbs that I am having in my recipes for both breakfast and lunch times and I have to say that it is pretty amazing. So, I am not saying that I am cutting down all carbs, but, I have to say that it does feel better to lower the amount of sugar (even from healthy and nutritious sources) that I am getting on a day to day basis. Sugar can be pretty addictive, and even the idea that I need a dessert so that my lunch feels complete does not look that good to me anymore. Therefore I am willing to make some changes, try out new approaches to the raw vegan lifestyle in terms of diet and food choices and of course share some of my findings right here with you. This week is all about breakfast and finding alternatives to the cereal flakes and sweeteners that I have been used to having for breakfast as a vegan for a pretty long time.
As a result of this new approach to my raw vegan diet, I have decided to make some changes to each meal, taking into consideration also things like affordability and accessibility (seasonal produce and stuff) and this is why this post is all about having a healthy and nutritious breakfast, filled with healthy fats, low in carbs and super delicious at the same time. YUM!
My summer breakfast consists of two parts: a chia pudding with different flavors from choosing different kinds of nut drinks or different kinds of fruit to add to it, and an energizing green smoothie which is just perfect for a morning meal.
First step is going to be making the chia pudding. Here are the ingredients that we are going to use for this:
1/2 cup home made brazil nut drink
3-4 tbsp chia seeds
2-3 tbsp raisins
3-4 tbsp coconut oil
1 pear, cut into small pieces.
We mix all the ingredients together and allow them to sit for a while, around 10-30 minutes, so that the chia seeds will absorb all the liquid and turn our mixture of goodness into a pudding like consistency.

New step is making our green energizing smoothie. For the smoothie we are going to use the following ingredients:
1 small avocado
juice of one lemon
1/2 cup to 1 cup of water, depending on how thick you want the consistency of your smoothie to be
1/2 cup to 1 cup of greens, depending on how green you want your smoothie to be, for this you can choose baby spinach, Valerian, or any other green goodies that your hart desires
1 cucumber.
We use a blender to mix all the ingredients together and blend them until we get a smooth and creamy consistency.
Both the chia pudding and the green smoothie can be served right away or they can also be kept in the fridge for up to 2 days so feel free to enjoy them in whichever way serves your own lifestyle best. The chia pudding is also great as a snack, or even as a dessert. You can also make it sweeter if you wish or just enjoy it as it is. Both recipes taste absolutely amazing and divine and they are also super filling and nutritious.

I truly believe that when we take care of our bodies and nourish ourselves with the most nutritious and fulfilling plant based foods available to us at all times, then we are really able to reach our full potential and live life to its fullest.
