Its summer time right now and I just simply love adding all kinds of delicious nuts and seeds to my salads as healthy and nutritious fat sources and also as a crunchy texture that just makes any salad taste even better. Salads are great for this time of the year as there is an abundance of local and seasonal produce that can be easily found all over the place right now. Yum!
Salads do not have to be boring or unfulfilling, quite the contrary, I do believe that salads can be super nutritious and filling and of course I love enjoying my daily greens in a big lunch salad. Salads are a great way to get amazing benefits from plant based products and to also live a healthy, balanced lifestyle. Salads can totally be both super tasty and super nutritious and filling at the same time.
Todays recipe is a great mix of soft and crunchy textures that make an absolutely divine recipe to be served in the summer time, but also at pretty much any time of the year, just feel free to substitute any ingredients that are not available and enjoy getting your daily greens intake in a beautiful and nutritious salad mix. For this olive and pecan salad recipe we are going to use the following ingredients:
1/2 head of romaine lettuce
1/2 cup of chopped zucchini
1/2 cup chopped bell pepper
1/4 cup green olives
1/4 cup pecans
1/2 cup tofu
any other greens that you wish to add to this salad
juice of 1/2 lemon
cold pressed olive oil
3-4 tbsp mix of seeds and nutritional yeast.

We mix all the ingredients together in a nice looking bowl of choice and serve right away. This can also be prepared in advance and served later on, just leave out the olive oil and let it be added to the bowl when the salad is served. This recipe is a wonderful mix of delightful textures, crunchiness and nutritious produce, and the taste is absolutely amazing and divine. Other things that can be added to this salad are some tomatoes or even some spices like garlic, oregano or basil.
