Zucchini Coconut Soup

As a part of my recent journey of increasing the amount of healthy fats that I am consuming on a day to day basis, while lowering the carbs intake, I would love to share with you today a super healthy, delicious and nutritious soup that can be served right away. It is easy to make, its filled its delicious and nutritious goodies and all kinds of raw vegan delights. I made it to be served cold, as a part of the summer menu, but it can totally be also warmed up and served like that. Its great at pretty much any time of the year and it can definitely be a wonderful addition to your own menu, be it summer time or just any other time.

For this zucchini and coconut soup recipe, we are going to use the following ingredients:

1/2 cup coconut milk (coconut cream works best)

1/2 cup chopped zucchini

1/2 cup chopped tomatoes

1 small piece of ginger

2-3 tbsp of nutritional yeast flakes.

Now, we are going to use a blender to mix all the ingredients together until we get a creamy and smooth consistency. When the soup is ready we can take it out of the blender and pour it into a nice looking bowl of choice. Soups are a great way of incorporating the benefits of plant based nutrition as well as hydrating the body in such an easy and quick way, as it take only about 10-15 minutes for the recipe to be done.

Next step we are going to make is adding a few more ingredients to our soup and mix them right away with our delicious and nutritious zucchini coconut soup:

juice of one lemon, and stir it well with the soup

1/2 cup chopped zuchini, and mix with the soup

2-3 tbsp of nutritional yeast flakes and seeds mix to be sprinkled on top of the soup.

You can also add to this recipe any other spices or ingredients that you feel like would be a wonderful fit to your own personal preferences.
