There are still a few days left of the official summer season, and while it is still quite nice outside, autumn is also on its way back to us. Therefore, I would say this is a great time to enjoy a healthy and delicious, super filling and nutritious summer snack or even dessert, which just reminds me of ice cream, but its definitely good for the body, and not just a bunch of processed ingredients thrown together, like traditional ice cream tends to be. I have been enjoying quite a lot lately some vegan yogurt options and I would also say that the simpler options we are able to find, the better and more nutritious they tend to be. So, for example I prefer to make my own fruit yogurt, by just buying the simplest version that I can find and adding on to it whenever I wish to. It simply tastes delicious.

For today`s recipe I have decided to add some mesquite powder which brings that ice cream flavor and texture to this yogurt and also make it taste so divine. I really hope you will be enjoying this to, so this being said, here are the ingredients that we are going to need for this super delicious and nutritious mesquite coconut yogurt recipe:

1/2 cup vegan yogurt

1-2 tbsp mesquite powder

1-2 tbsp agave nectar

1-2 tbsp melted coconut butter

3-4 tbsp coconut flakes.

We mix all the ingredients together in a nice looking bowl or glass of choice and then we can allow it to stay in the fridge for a while to have a cooling texture, or we can also just serve it right away. This recipe is a great choice for a super filling and nutritious raw vegan dessert or snack and it can definitely be a healthier option for summer treats such as ice creams and so on.
