Blueberries and Coconut Pudding

Today is all about berries and coconut! For this amazing recipe that I am going to share with you today, you can actually use any kind of berries that you wish: raspberries, blueberries, strawberries, blackberries and so on. I have chosen blueberries for myself, because I just simply love those little delicious nature`s goodies. Blueberries are great for the eyes as well as for balancing blood sugar levels, those berries are also filled with antioxidants and lots of nutritional benefits. Feel free to use fresh or frozen berries, depending on where or at what time of the year you might be finding yourself trying out this recipe. Both options work just great and the taste is going to be absolutely divine. This recipe is super simple and easy to make with just a few ingredients and it only takes about 10 to 15 minutes to be ready to be served. Yum!

For this recipe we are going to use the following ingredients:

1/2 cup blueberries (or any other berries of choice, fresh or frozen)

1/2 cup coconut milk

2-3 tbsp chia seeds

2-3 tbsp agave nectar

2-3 tbsp coconut flakes.

We mix all the ingredients together in a mixing bowl of choice, and then all we have to do is allow it to sit for about 10-15 minutes in order to get that fluffy and pudding like consistency that results from the chia seeds absorbing all the liquid. Then, when it gets the desired consistency we can transfer our delicious and nutritious pudding into some serving bowls, cups or glasses of choice. Last thing to do is sprinkle some more coconut flakes on top of the pudding and the pudding is ready to be served. It can also be kept in the fridge for up to two days and enjoyed at a later serving.
