Chocolate Chips Holiday Cookies

Well, there is definitely nothing like the holiday season. Its getting closer and closer to that amazing time of the year that we have all been waiting for. And, of course, if it is holiday season that means also that most of us would be enjoying all sorts of goodies and delicious desserts , so why not make sure those amazing delights are also healthy and filling? Well, today`s post is all about that because I am going to share with you a new and amazing recipe for holiday cookies that is just tasty and divine. You are absolutely going to love it, but before I share this wonderful cookies recipe with you, let me tell you one more amazing thing, it is sweated with fruit juice! Yes, you have heard that right. I have been hearing about this idea of using fruit juices or purees to sweeten recipes, but to be honest I have not tried it before, until right this moment when I have decided to make today`s recipe. Therefore, for this recipe I have been thinking of giving it a little bit of an exotic flavor and this is why I have added super delicious and nutritious pineapple juice in order to sweeten it. Yum!

For the cookie base of this recipe we are going to use the following ingredients:

2 cups of sunflower seeds, grounded into flour

1 cup almonds, grounded into flour

1 cup (or more if needed) pineapple juice

1/2 cup coconut milk

1 cup coconut flakes

cinnamon, vanilla, cloves.

We use a food processor to mix all the ingredients together until we get a firm, thick consistency.

Now we can move on to making our chocolate chips. For the chocolate chips we are going to use the following two ingredients:

1/2 cup chopped almonds

1/2 cup pieces of vegan dark chocolate of choice.

We use the food processor once more and pulse the ingredients until they get a chip like consistency and begin to stick to one another. We can use those almond chocolate chips to top the cookies or we can add them to the cookie mixture and make cookies that have those chocolate chips inside them. When we are ready we can form our individual cookies and then all that is left is to just dehydrate them in order to get that cookie like consistency and crunchy texture. In order to do this, we can use a dehydrator of choice, or just simply an oven at a low temperature.

When the cookies are done, we can top them with some more almond chocolate chips, some coconut flakes or even sprinkle some cinnamon powder on top of them, just because it is the holiday season. When we are ready with the toppings we can simply give those cookies a try right away, or keep them for a later serving. Those cookies also last for a few days in a dry and cool environment. They can be served as dessert or even as a snack at home or on the go.
