I have just recently discover the aronia berries. At first I have been using the powder form as a supplement to be incorporated into my daily smoothies and then I found out that aronia berries are also available as dried fruits or even as frozen fruits just like any other berries. Those amazing and not so common berries can be used of course for all kinds of juices and smoothies, as well as for delicious and nutritious raw vegan desserts: anything from puddings to cakes and all the good stuff.
Aronia berries are high in antioxidants which are great for reducing inflammation in the body and of course for supporting the body`s natural adaptability to stressful times, which can also contribute to strengthening the immune system and an overall protection of the body against all kinds of stress factors. Aronia berries are also rich in fiber and vitamin C, even more reasons to see them as a healthy, delicious and nutritious add to your own diet and lifestyle. The taste is astringent and a little bit different than the more common berries that can usually be found at the supermarket, but when we mix them with some other raw vegan goodies and take into consideration the health benefits, I would say they are definitely worth giving a try.
Today`s recipe is a wonderful and creamy, super delicious and nutritious aronia pudding, which can be served both as an energizing breakfast, as well as a nourishing dessert. For this recipe, we are going to use the following ingredients:
2 cup of frozen aronia berries/ dried aronia berries, hydrated in advance
1/2 cup – 1 cup coconut milk
3-4 tbsp agave nectar
3-4 tbsp coconut oil/ coconut butter for even more goodness
vanilla or other spices of choice.

We mix all the ingredients together into a blender and then when the pudding gets a thick and creamy consistency we can take it out of the blender and transfer it into a serving bowl of choice. Last, but not least we can add some more aronia berries on top of our pudding and even sprinkle some coconut flakes or other topping that we desire in order to give it a nice look and a beautiful texture. This pudding can be served right away, or it can be kept into the fridge for later servings for up to two days.
