Summer is now here and it is time to just enjoy some walks in nature, embrace some soothing and relaxing practices, balance our work and overall state of being and simply take great care of ourselves. I know it for sure that this is something to be done at all times, no matter what season might be, but, since I recently found myself caught up with all kinds of tasks and stressing factors that just kept coming and coming at me, I have finally arrived at the conclusion that this idea, its summer time, would be a great moment to remind myself of what matters most: my own overall state of health and well being. Simply put, when we are healthy and when we are taking time to take great care of ourselves and to nourish ourselves both physically and spiritually, then we are truly and fully able to bring our best selves into the world and then as a result are we also being able to help other people and bring our amazing, unique contribution to a better world.
A world that is filled with love and grace is available to us at all times, all we have to do is learn to take care of ourselves, take the time to take care of ourselves and sometimes just remind ourselves about those truths and just accept that there may be times when whatever might be going on into our lives, whatever we might be thinking we are capable of doing is enough and it is exactly where we are meant to be or what we are meant to be doing at those particular times.
Therefore in the spirit of today`s theme, refreshing our connection with what matters most, taking great care of our bodies and overall well being and inner fulfillment and wealth, peace and nourishment, I am going to share with our a super delicious and nutritious salad recipe which is great at any time of the year, but especially now since there is an abundance of fresh and affordable produce on the market and it just simply tastes divine. Yum! For this recipe we are going to use the following ingredients:

1-2 cups mixed greens (any leafy veggies or greens of your choice)
1 avocado
1 cup diced cucumbers
1 cup sliced tomatoes
1/2 cup chopped tofu
1/2 cup Kalamata olives
3-4 tbsp mixed seeds
3-4 tbsp nutritional yeast flakes
1 tbsp Caraway seeds.
We mix all the ingredients together and transfer them into a nice looking bowl of choice and serve right away. A few other ingredients that we can add would be other spices, such as oregano or basil, some cold pressed oil like olive oil or coconut oil, or even some fresh spices such as mint would go really well with this mix. The salad can also be prepared in advance for later servings, for taking it to work or just be served in anywhere between 24- 48 hours and it will still be crisp and fresh. It is filled with delicious veggies and it also has lots of healthy proteins coming from the tofu and the seeds, as well as super amazing fats from the avocado and Kalamata olives. I usually buy tofu with Carraway seeds because I just love the taste of this beautiful and magic ingredient, but lately I have decided to just mix them by myself and I have to say the taste and the texture of those vegan meals in which I include Carraway and tofu is just amazing. I simply love it!

Making healthy and fulfilling choices on a day to day basis is a habit just like any other habit and it requires repetition in order to became second nature, but as soon as our bodies and our minds get used to the new habit, then everything unfolds naturally, in a healthy, balanced way. I truly believe that when we take care of our bodies and nourish ourselves with the most nutritious and fulfilling plant based foods available to us at all times, then we are really able to reach our full potential and live life to its fullest.
