Today I am going to share with you one more super delicious and nutritious blueberry recipe: its a blueberry and bananas chia pudding. It is perfect for mornings as an easy to make breakfast, but it can also be served as a dessert in the afternoon, or just be taken on the go by just putting it in a glass jar and taking it with you to wherever places life might take you to. I have really been loving all kinds of chia puddings lately, but especially the berry ones, made super special with delightful and amazing fresh berries. This is a truly great breakfast, as it hydrates your body properly, it keeps you satiated along the way and it tastes divine. Chia seeds are also a great source of omega-3 fatty acids and are also rich in antioxidants and provide you lots of good fibers. Is is also a great healthy dessert idea, it is just about sweet enough to make you really love it and satisfying enough to just feel great about yourself for making healthy and delicious conscious choices on a day to day basis.

Here are the ingredients that we are going to need for this delicious blueberry pudding:
1 cup of almond or coconut milk
2-3 tbsp chia seeds
1/2 – 1 cup of fresh blueberries
2-3 tbsp coconut butter
1 sliced banana.
We mix the coconut or almond milk with the chia seeds and the coconut butter and allow this mixture to sit until it gets a pudding like consistency. Then we can add half of the berries and incorporate them into our pudding, add the sliced banana on top of our pudding and put the resp of of the blueberries on top of our banana slices. The pudding can be served right away, or it can be kept into the fridge for later servings for up to two days. Enjoy!
