Lately I have really been loving and enjoying all kinds of what I like to call super simple recipes. This basically means that those recipes have as little ingredients as possible, ideally somewhere between 3 to 5 ingredients, which also makes them not only super tasty but also super easy to make and enjoy with friends or family members. Of course, the recipes are made of pure, raw ingredients, and honestly, everybody is just going to love them, so just give them a try! This weeks recipe is a wonderful mix of crunchy and sweet textures, from the wonderful ingredients, it is just a wonderful choice to make not only for a healthy and delicious snack, but those little goodies are perfect as a savory and nutritious breakfast as well. I love to mix textures so in my case, I personally love enjoying those goodies with a smoothie, and my favorite one would be a blueberry and bananas smoothie, they just go perfectly together.

For this recipe we are going to use the following simple and easy to find ingredients:

1 – 2 cups dates or date paste

1/2 cup cacao nibs

1/2 – 1 cup coconut flakes.

If we are using date paste, we don`t even need a food processor to mix them all together with is also great, but even if we are using dates, if they are also pretty soft we can make the paste and mix all the ingredients together by hand, like we wood do when preparing a cooking dough. This mixture smells absolutely amazing and it tastes just divine. Feel free to adjust the quantities for the cacao nibs and/ or coconut flakes, like I did for my mix, I love coconut in any sort of format so I added more coconut flakes to my mixture to add even more goodness to the mix. When the cookie dough is ready feel free to roll it into balls, or make any shape of choice for your servings. Yum!

I truly believe that when we take care of our bodies and nourish ourselves with the most nutritious and fulfilling plant based foods available to us at all times, then we are really able to reach our full potential and live life to its fullest. Life is made to be lived with a sense of purpose and meaning, and by practicing conscious eating we are bringing meaning and purpose into our life, therefore redefining our sense of health and well being in general and living a happy, healthy and fulfilling life as a result.
