Lately I have really been loving and enjoying all kinds of what I like to call super simple recipes. This basically means that those recipes have as little ingredients as possible, ideally somewhere between 3 to 5 ingredients, which also makes them not only super tasty but also super easy to make and enjoy with friends or family members. Of course, the recipes are made of pure, raw ingredients, and honestly, everybody is just going to love them, so just give them a try! This weeks recipe is a wonderful mix of sweet and bitter textures, from the wonderful ingredients, it is just a wonderful choice to make not only for a healthy and delicious salad, but this wonderful mix is perfect as a savory and nutritious snack as well. I love to mix textures so in my case, I personally love enjoying those salad mixes with a crunchy texture, such as raw breads or just rice crackers or gluten free vegan bread, they just go perfectly together.
For this recipe we are going to use the following ingredients:
1 cup rucola
1/2 cup chopped red pepper
1/2 cup cucumber slices
1 creamy tofu
3-4 tbsp nutritional yeast flakes.

We mix all the ingredients together, and of course as a dressing we can also add some lemon or lime juice and a little bit of olive or hemp oil. I have really been loving hemp oil lately and I have to say that it is just perfect for salads or main courses. The taste is pretty intense, but I just love it. I will get back to this subject on hemp goodness (hemp seeds – super crunchy and tasty, hemp oil – wonderful and fulfilling taste, loving texture) in a future post, so for now that is all that I can say. Give hemp oil a try, it really is super tasty, delicious and of course super nutritious. We can also add some spices to the basic super simple salad mix from this weeks posts, I love oregano in general in my salads, but I am also enjoying things like basil or garlic, turmeric or ginger from time to time.

Making healthy and fulfilling choices on a day to day basis is a habit just like any other habit and it requires repetition in order to became second nature, but as soon as our bodies and our minds get used to the new habit, then everything unfolds naturally, in a healthy, balanced way. I truly believe that when we take care of our bodies and nourish ourselves with the most nutritious and fulfilling plant based foods available to us at all times, then we are really able to reach our full potential and live life to its fullest. Life is made to be lived with a sense of purpose and meaning, and by practicing conscious eating we are bringing meaning and purpose into our life, therefore redefining our sense of health and well being in general and living a happy, healthy and fulfilling life as a result.
