Black Beans Kale Salad

Today is all about super easy, delicious and nutritious, easy to make salads, that have only 3 to 5 ingredients, what I personally like to call super simple recipes and in this case super simple salads. I love the super simple and easy to make recipes with just anywhere in between 3 to 5 basic ingredients because it is just so efficient and fun to make them. I also love kale, and even though it is not so easy to find in the area where I live, I always enjoy preparing nutritious and delicious recipes with this amazing green, whenever I have the opportunity of finding it and buying it. Kale is the master of green goodness and it is super filling, filled with powerful nutrients and antioxidants and yes, it might be a bit hard to get used to it at first, but it is still worth the try. Therefore, since this week is kale week for me ( I found kale at the stores where I usually do my groceries shopping and I bought lots of it), I am going to share with you today an absolutely amazing and divine tasting kale salad recipe.

For this beans kale salad recipe we are going to use the following ingredients:

1 cup canned black beans, or just soaked, cooked black beans

1-2 cups of chopped kale leaves, with stems removed

juice of 1/2 lemon

1 yellow bell pepper

some cold pressed oil of choice.

We mix all the ingredients together, toss them well, we can massage the kale, so to speak, to allow the leaves to soften for a bit by absorbing the lemon juice and then we can enjoy this amazing tasty and great looking salad as a delicious lunch option or just pack it and keep it for a later serving. Just keep in mind that if you are preparing the salads, in general, for later servings, it is best to add the oil right before serving them so that we can better preserve the freshness and the crispiness of the salads ingredients.
