Coconut Vanilla Chia Pudding

Chia seeds are just amazing, they make a wonderful looking pudding, can be served in raw vegan bars and cookies or even proteic smoothies and even though the taste is not necessarily their main keypoint, they are deffinitely a great source of fiber, nutritients and healthy fats. I love using chia seeds especially for making chia puddings, with all kinds of fruits and nut milks, but I also love using protein powders lately which also contain, among others chia as a source of healthy fats and protein. Chia seeds are now all over the place so they are also super easy to find, and the chia pudding recipes are super filling and also easy to make. We just have to basically allow the chia seeds to absorb the liquid, choose the toppings or flavors that we would like to add and a super nutritious breakfast or a super tasty dessert is ready to be served. This is why today, I am going to share with you another super easy to make recipe, with only 3 to 5 ingredients, which is a coconut vanilla chia pudding.

For this recipe we are going to use the following ingredients:

3/4 cup almond milk, vanilla flavour, or just add the vanilla by yourself

2-3 tbsp chia seeds

coconut chips or coconut flakes to decorate

1 tbsp coconut butter, optional for even more goodness.

We mix all the ingredients together, allow the chia seeds to absorb the liquid, this should take around 10-15 minutes, we can stir from time to time to get an even texture and then the pudding is ready to be served. It can be used as a super filling and nutritious breakfast option or simply as a tasty dessert recipe. It can also be served right away, or kept in the fridge for up to 2 – 3 days. It can also be taken to – go, on the road, while traveling or anywhere where our daily lives might bring us. It is super easy to pack and just take with us on the go. I love the combination between the creaminess of the pudding and the crunch of the coconut chips, and of course, the taste of vanilla and coconut is just simply divine.
