In a previous post I shared with you my thoughs on fiber and amazing fiber souces and ways to mix them in order to get some good fiber into your day to day diet and lifestyle. Today I am going even further and I will share with you a great, super delicious and nutritious recipe for incorporating those amazing fiber sources into your daily routine. You are absolutely going to love it, trust me, it tastes absolutely divine and it has a wonderful, creamy, filling texture. I, for sure, love it. Of course, it has lots of other great nourishing ingredients such as berries for their antioxidans, coconut butter for healthy fats and last but not least some coconut flakes for a touch of gourmet experience. Therefore, lets get to it, its super fun and easy to make, no kitchen equipment needed and you can serve it right away or even take it with you on the go. Yum! Amazing!
Here are the ingredients that we are going to need for this super filling, nutritious and delicious fiber mix based breakfast recipe:
2 1/2 scoops of fiber mix (I used chia, flaxseed and psyllium)
1 1/2 scoop coconut flakes
1 small pack of coconut butter
1 small cup coconut milk
a few berries to top it at the end.

We mix all the ingredients together and allow the fibers to absorb the liquid and thicken up the consistency, then when we get a pudding or porridge like consistency, we can add the berries on top and some more coconut flakes. I find it to be pretty sweet and nourishing from the coconut butter`s natural sweetness and of course from the berries, but if you desire some more sweetness in your recipe you can also add some agave nectar, raisins, dates or any other sweetner of choice. If you want even more flavor and spice in your pudding you can also add some vanilla, cinnamon or other spices of choice. I just love it plain and simple with berries and some coconut flakes on top. Feel free to experiment for yourself and you own taste buds and find what suits your own unique preferences best.
